Raw Pecan Love Pie

Hi Guys!
I thought I would post this just in time for Thanksgiving, in case you want to incorporate something raw but still DELISH! into your Thanksgiving meal.

Pecan pie always conjures up memories of being made and given with love. There  is something very nurturing, and loving, about pecan pie! This is definitely one of my own personal favorite creations. I think you will really like it- even if you are not usually a pecan pie fan. :) I made up 3 different fillings, and this one was voted the favorite!

Crust:
-    2 cups walnuts
-    3 cups of pitted dates
-    1 cup coconut flakes, finely ground

Pit the dates yourself, extracting each pit and discarding. Add the dates, coconut flakes and walnuts to the food processor and mix until thoroughly blended.

Press the mixture into the bottom and sides of a pie tin. Set to the side.

Filling:
-    2/3 cup filtered water
-    1 cup raw pecans, soaked about 15 minutes
-    1 cup organic Thompson raisins
-    1 Tbs. vanilla extract
-    1 tsp. nutmeg (optional, I really like this spice!)
-    1/3 cup maple syrup
-    1 tsp. Celtic sea salt

Blend all ingredients together in the blender until smooth. Pour onto the crust of the tray, and garnish with fresh, raw pecans into a pretty pattern.

Set in freezer overnight, or for at least 5 hours before serving.

Slice up and enjoy!

    I know that when you recommend a dessert its gonna be good and this pecan pie lived up to your recipe reputation. I made this pie and took it to meat eaters who were floored by its yumminess. My concern was that as it thawed, it was a bit more watery than it should have been. Has this been your experience?? What did I do wrong?? To fix it, for the second pie, I added psyllium husk powder to thicken. The first one I sampled, the second goes to a vegan sweets critic. I’ll let you know what happens!

      Thanks so much for your kind words. So glad you like the blog!! I only take it out right before it is served. I even turn my freezer up so it stays nice and hard, and it is pretty solid when it comes out. If it is still coming out watery for you, cut the water called for in the recipe in half. :)

I currently struggle between two trains of thought … sometimes I think “I should just relax and enjoy life … eat food that tastes good!” and other times I think “Feeling good is much more important than tasty food…so I will ONLY eat foods that are good for me” … now you have a given a recipe that can satisfy BOTH trains of thought!!!

    • But with Kim’s recipes, you should be able to eat tasty food at the same time as eating healthy food! At least, that is what I have experienced.
